I was going through my phone the other day and found about a million pictures of the dinners we’ve been having the past couple of weeks. I decided it was time to share a few of my favorite meals with you!
Spinach, Sausage, & Potato Soup
This soup was a real crowd pleaser (crowd meaning The Professor). It had quite a kick to it and we both liked the spiciness. This soup, like most, was delicious the first night we ate it and even better on nights two & three. Click HERE for the recipe.
Homemade Chicken Tenders, Smashed Potatoes, & Green Beans
Homemade chicken tenders are SO EASY and so much better for you than the packaged version. I took chicken, rubbed it with ranch dressing, and rolled in in bread crumbs. Bake for 20-40 minutes (depending on the size of the tenders) at 400 degrees. I have no green bean preference but The Professor prefers French cut – he can’t explain why…
Homemade Breakfast Sandwiches
This one didn’t really work out as well as I had hoped. We both like to sleep as late as possible in the morning and then frantically get ready to run out the door. This means that there is no time for breakfast (the most important meal of the day!). We have been buying Jimmy Dean breakfast sandwiches because they are so easy but they were running up our grocery bill every week. I decided to try making my own and they cooked up GREAT. We had major issues reheating them in the morning – none of the elements reheat at the same rate. We would have gooey cheese and frozen sausage. We ended up having to disassemble them and reheat elements separately. They tasted great, but it was way to much effort in the morning. Somebody needs to tell me where I went wrong…
Lasagna Stuffed Shells
This one was fun to make. It’s just lasagna in a different shape, but I think I preferred it over the regular version 🙂 This recipe fed two hungry people for two meals. We added more cheese than what the recipe called for and I highly recommend you do the same! I used THIS recipe but swapped out the sausage for ground hamburger.
